Po-Tay-Toes!

Did you know that the smallest province of Canada, Prince Edward Island, grows 25% of the country's potatoes? That's more than any other province!

You cannot drive around the island without seeing potato fields, stands selling "Fresh Potatoes", or restaurants touting they serve PEI potatoes on their menus.

One dish in particular stood out on my trip, the Potato Pie at the Prince Edward Island Preserve Company. This thing has layers of potato slices and cheddar cheese with crispy bacon for a crust. But the star of the show is the maple bacon cream sauce served on top! It was so rich and unique and complimented the potatoes so well!

It's such a popular dish that the restaurant has pre-printed flyers with the recipe to hand out to visitors who ask.

Here it is for you to try at home:

PRESERVE COMPANY POTATO PIE

Pie:

  • 3 to 4 lb. peeled potatoes
  • Cheddar cheese, grated
  • 1 tsp. ground thyme
  • Chopped chives (fresh or dry)
  • 1 lb. bacon
  • Salt & pepper

Thinly slice potatoes.

Line a pie plate or casserole dish with bacon, leaving half slice of bacon over the edge of dish. Layer potatoes, a

generous amount of grated cheese, chopped chives, salt and pepper to taste. Repeat until you have four layers.

(Sprinkle first layer only with ground thyme.)

Pull bacon up over top.

Pie should be 4 to 5 inches thick at middle. Fasten centre with skewer. Cover with plastic wrap (yes, plastic wrap) and foil.

Bake at 400 F for 2 hours, then remove wrap and continue to bake for another 30 minutes, until fork tender and the bacon is cooked.

Maple Bacon Sauce:

  • 1 c. mayonnaise
  • 1/2 c. sour cream
  • 1/4 c. maple syrup
  • 1 tsp. bacon bits

Combine all ingredients well and top each slice of Potato Pie with a generous dollop of delicious sauce!

Now, I've only tried this recipe once and it worked out pretty well. I think the brand of bacon and cheese will affect the flavor variations most. I also cannot vouch for wrapping in plastic because I (stupidly) used a plant-based plastic wrap and that definitely melted and caused a mess.
